  • Fourteen allergens are named in Annex II of Regulation (EU) 1169/2011, and the duty applies to non-prepacked food, which is what a restaurant serves.

  • The regulation requires the information to be available. Article 44 lets each member state decide the means, which is why the rules differ between, say, Germany and Ireland.

  • "May contain" is a voluntary statement about cross-contamination risk. It is not a substitute for the mandatory information and must not be used to cover uncertainty about a recipe.

  • The hard part is not the list, it is keeping it true through a menu change. Structure allergens per item, not per menu.
